ICINGS: Gelatin is often used in icings to aid in retaining moisture, and to stabilize the mix. Gelatin also contributes to the smooth texture of icings by retarding the growth of large sugar crystals. As a setting agent, gelatin is an important ingredient in icings and glazes, especially where baked goods are iced and wrapped in continuous operation, since it eliminates stickiness and adherence to the wrapper.
