If gelatin is stored in a tightly sealed poly lined container in normal indoor conditions, it will remain stable indefinitely.
It can be re-tested annually to insure that it has maintained its integrity.
The only exception would be is if the gelatin is kept in an area heated above (45º) 113ºF with relatively high humidity (above 60ºRH). In this extreme scenario, the gelatin would gradually lose its ability to swell and dissolve.
If an expiration date is required, we would list 3 years from our date of manufacture. All Gelatin Innovations Hydrolyzed proteins meet U.S.P. / N.F. specifications for gelatin.
