  superwhip™ Gelatin Back

 

Superwhip™ is a proprietary blend of our 250 Bloom Porcine Gelatin with Sodium Hexametaphosphate. The Phosphate acts as a whipping agent and increases the bloom strength of the gelatin. This creates a lighter, fluffier marshmallow.

Specifications

Typical marshmallow recipes call for 1.75% - 2.5% of the total batch to be gelatin.

If you have never tried homemade marshmallows before, you’re in for a surprise! They are nothing like the ones you find in the grocery store.

Try this basic recipe. You can be creative and use alternate ingredients in place of the chocolate chips.

 

Chocolate Chip Marshmallows

Ingredients:

  • .75 oz Superwhip™ Gelatin
  • ½ cup water
  • 2 cups sugar
  • 2/3 cup light corn syrup
  • ¼ cup water
  • ¼ teaspoon salt
  • 1 Tablespoon  vanilla extract
  • 1 cup miniature chocolate chips
  • powdered sugar
Directions:
  1. Spray a 9 x 13 glass baking pan with nonstick cooking spray. Dust with powdered sugar.
  2. In a large mixing bowl dissolve the Superwhip™ Gelatin in the ½ cup of water. Let stand for 15 minutes or until it is completely dissolved.
  3. Combine sugar, corn syrup and the ¼ cup of water in a small saucepan. Bring to a boil, stirring frequently, until the mixture reaches 245°F. Use a candy thermometer to monitor temperature.
  4. Remove the sugar mixture from the stove. With an electric mixer on low, slowly add the sugar syrup to the Superwhip™ Gelatin.
  5. Once the sugar has been incorporated, add the salt.
  6. Turn the mixer on high. Add the vanilla. Beat the mixture on high speed for 7-12 minutes or until the mixture looks like marshmallow fluff and has tripled in volume.
  7. Pour the marshmallow mixture evenly into the prepared pan. Tip: to help get the marshmallow out of the bowl use a spatula that has been spayed with nonstick cooking spray.
  8. Sprinkle the chocolate chips evenly over the marshmallow mixture and lightly press into the marshmallow.
  9. Let cool at least 6 hours.
  10. Turn marshmallows out onto a surface that has been lightly dusted with powdered sugar. Flip over so the chocolate chips are on top. Cut into squares using a pizza cutter.
